Almost Instant Creamy Carob Pudding

2x 10.5 oz Packages Silken extra-firm tofu
3 Tbsp. Maple Syrup or Honey
1 tsp Vanilla Extract
1 1/3 cup Carob Chips

In a blender, combine the tofu, maple syrup or honey and vanilla until very creamy.

Melt the chips in a double boiler or do this: Boil small pot of water on the stove. Place the carob chips in a bowl that will fit on top of the small pot. (Make sure that the bowl does not go inside the pot but it sits on top of the rim.) Melt the chips in the bowl from the heat of the boiling water stirring frequently.

Quickly add the melted carob chips to the tofu in the blender, and combine until very smooth. Pour into bowls and chill.
