This is a great quiche-style dish to offer with your Christmas Dinner. It’s always a big hit at the Christmas and New Years Pot Luck Parties as well!

4 Cups – Chopped raw green garden vegetable (spinach, broccoli, chard, or asparagus)
½ Cup – Chopped purple onion
2 Cups – Milk or soy milk
¼ Cup – Grated Cheese (milk or sharp cheddar)
2 Tbsp. – Nutritional yeast
1 Tbsp. – Egg replacer (Ener G)
¼ tsp. – Chili powder
¼ tsp. – Curry powder

  1. Blend vegetables, except the onions, in the blender with the rest of the ingredients.
  2. Stir in the onions and pour into an unbaked pie shell.
  3. Bake at 350 degrees for 30 minutes

Serve with a little chopped fresh parsley on top!
