Mock guacamole with peas

 I have heard of a mock guacamole made with peas instead of avocados. It sounds interesting. Do you know the recipe?

If you are looking to avoid avocados because you want to reduce the fat in guacamole, don’t bother. The fat in avocados is good fat. And, besides, you probably couldn’t eat enough guacamole in one sitting to overdo the fat.

Personally, I don’t think peas taste like avocados, so I recommend this recipe be served on its own laurels – as a green pea purée or dip. Whatever you want to call it, it’s healthful and tasty. Let me know if this recipe rocks your “guac” cravings.

Makes: 2 cups or 8 servings

Mock Guacamole

INGREDIENTS
2 cups frozen peas
2 large clove garlic
1 small onion, quartered
1/2 cup loosely packed fresh cilantro
1 tbsp lemon juice
1/4 tsp ground black pepper
1/8 tsp hot-pepper sauce

Cook the peas according to the package directions, but without adding salt. Drain well.

In a blender or food processor, blend or process the garlic cloves until chopped. Then add the peas, onion, cilantro, lemon juice, black pepper and pepper sauce. Blend or process the mixture until smooth. (If necessary, stop the blender and scrape down the sides of the container.)

Transfer the mixture to a bowl or plastic container. Cover and chill in the refrigerator for at least one hour, to blend the flavors.
