NO-FUSS VEGGIE STEW

This recipe is adapted from “Heart Smart—Recipes and Tips
for a Healthier Lifestyle.”

2 C. water
2 med. potatoes, diced
2 med. carrots, diced
1 med. yellow onion, diced
2 celery stalks, diced
1 green pepper, diced
½ tsp. thyme
½ tsp. rosemary
½ tsp. paprika
1 tsp. dill
1/8 tsp. black pepper
½ tsp. salt (optional)
1-16oz. pkg. frozen mixed veggies
1-26oz. jar low-fat spaghetti sauce

1. In a medium pot, bring water, potatoes, carrots, and onions to a boil. Turn heat down to medium and simmer 10 minutes.
2. Add celery, green pepper and seasonings. Simmer for 5 minutes.
3. Add frozen veggies and spaghetti sauce. Bring to a boil, then simmer 8-10 minutes.
4. Serve with whole-grain bread.
