1 pkg. nori sushi sheets
1 C. brown rice
1 block firm tofu
1 bottle ginger teriyaki sauce, or your favorite marinade
1 ripe avocado
1 cucumber
1 pkg. sunflower sprouts
tamari for dipping
pickled ginger
wasabi paste

1. Cook brown rice, covered, for 45 minutes on low, with a 2:1 water to rice ratio. Let cool.
2. Use a bamboo sushi roller. Spread a thin layer of rice on the nori sheet.
3. Place the rest of the ingredients in the middle of the roll.
4. Roll up tightly, slice and serve with wasabi paste and pickled ginger.
