Raspberry and Lemon Balm Fool

2 pints ripe raspberries
1 handful of lemon balm leaves, lightly chopped or torn
dash Cassis (optional)

Blend quickly in a blender or food processor. Strain out the seeds if time allows. Add 4 T heavy cream confectioner’s sugar or icing sugar to taste and pulse ’till blended. Garnish with mint and serve chilled.
