To prepare a good salad of rice you can use both an English cooked rice (boiled in salted water and then place under cold running water), resulting a type of rice pilaf, using preferably Carnaroli rice, or other varieties of rice that does not overcook.
If you want a very tasty dish you can use the Vialone, which is the type of rice that absorbs more flavors. The rice salad is a very pleasant dish , especially in summer, and you can pack in many ways, using also some leftover cheese (Emmental, Gruyère, fontina cheese), meats (ham, salami, tongue, bologna, sausages), pickles (onions, cucumbers, peppers, etc.), tuna, anchovies, kippers, seasonal vegetables (tomatoes, celery, croissants, beans, peas, etc.).
Season with olive oil, vinegar or lemon juice, salt and pepper, or mayonnaise with mustard sauce, ketchup or other cold sauces.
