Salsa Verde Fria (COLD)


  • 12 fresh tomatillos
  • 2 C very ripe tomatoes, chopped
  • 1 onion, chopped
  • 1 4oz can of chopped green chiles
  • 1 T cilantro, chopped
  • 1 T oregano
  • 2 T wine vinegar
  • 1 T extra virgin olive oil
  • 12 tomatillos
  • salt & pepper

Husk and wash tomatillos. Do not remove seeds. Place in blender and Puree.

Add tomatoes, onion, green chiles and cilantro to mixture. Blend.

Pour into a serving bowl.

Stir in wine vinegar and olive oil.

Salt and pepper to taste.

Chill for one hour.

Garnish with cilantro sprigs and serve.
