Southern Style Soy Sprouts


2 Tbsp. oil
1/8 tsp. asafetida
1/3 cup celery
2 cups tomatoes
1/4 bay leaf
1 tsp. vegetable salt
2 cups soy sprouts


Heat oil and saut̩ with next 2 ingredients. Then add next 3 ingredients and simmer for 10 minutes. Remove bay leaf and add sprouts. Bring to boil, then lower to simmer for 15 Р20 minutes until sprouts are tender. You may also use any other large, starchy bean in place of soybeans, such as mung bean or lentil sprouts. Cook these only 8 to 10 minutes.
