Ingredients
- 1 1/2 cups SR Flour
- 3/4 cup soft brown sugar
- 1 tspn bicarb soda (firmly packed)
- 1/2 tspn cinnamon
- 1 egg (or substitute)
- 1/2 nutmeg
- 1/2 cup soy
- pinch of all spice
- vinegar added
- pinch of ground ginger
- 1/2 cup sultanas
- 1/2 cup vegetable oil
- 1/2 tspn vanilla
- 11/2 cups grated carrot
- chopped nuts (optional)
- 1 cup drained crushed
- pineapple in syrup
Method
Divide the mixture between the muffin pans and bake until done, about 20-25 mins. Makes 10-12.
NB (Optional) – 1/2 cup shredded coconut can be added. Sultanas can be replaced by dates and for ginger lovers – glace ginger (chopped) can also be added.
