Whole Wheat Topping / Biscuits


1/3 cup oil
13/4 cups whole wheat flour
21/2 tsp. baking powder
3/4 cup milk
Dried herbs (opt.)


Combine first 3 ingredients and mix together until a sandy texture. Add liquid and mix thoroughly. The dough will be a little wet and sticky. Turn dough out onto a well-floured counter and knead 10 times. With a rolling pin, roll dough out to 1/4″ to 2″ thick in a sheet as large as the baking dish is. Trim to right size and just set sheet of dough on top of the ingredients already in the baking dish. Bake at 400º for 25 to 30 minutes. If there is any extra dough, it can be rolled out and cut into circles or other shapes and baked into delicious biscuits. To make a shepherd’s pie, simply top the tofu, vegetable and gravy mix with mashed potatoes and bake until potatoes start turning golden brown. To serve, just cut with a knife through topping; spoon out topping and tofu-vegetable inside.
