Pineapple Upside Down Cake


2 Tbsp. butter or margarine
1/4 cup honey
1/4 cup date sugar
4 – 6 pineapple rings 1/4″ thick
2 tsp. vanilla
1 cup honey
1/4 cup butter or margarine
1 cup water
2 Tbsp. yogurt
3 cups whole wheat pastry flour
4 tsp. baking powder
1/2 tsp. salt


Preheat oven to 350ºF. Melt first 2 ingredients together in a 9″ square baking pan. Add date sugar. Lay pineapple rings in syrup. Mix next 5 ingredients. Sift in dry ingredients and mix until lumps are out. Pour on top of pineapples; wet hand and pat flat and even. Bake 45 minutes at 350ºF. Turn upside down and empty onto a plate as soon as it comes out of the oven.
