Raw Apple Pie: Filling


4 – 5 apples, peeled and grated (2 cups firmly packed)
1/4 cup natural peanut butter
2 Tbsp. honey
1 Tbsp. liquid lecithin
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt (if using unsalted peanut butter)
2 – 4 Tbsp. currants (to sprinkle on top)


Prepare your favorite raw piecrust and press into 8″ pie plate. Pyrex is the best. Peel, core and grate apples. Combine with remaining ingredients, except currants, and mix well. Spread evenly in pie shell, sprinkle on currants and chill at least one hour before serving.
