1 quart fragrant rose petals, tightly packed (pesticide-free)
3 cups water
1 package Sure-Jell
2 tablespoons lemon juice
Red food coloring (optional)
4 cups sugar

Heat the petals and prepare water to boil. Steep it for 20 minutes, introducind the petals into the liquid occasionally. Strain, and reserve petals. After you measure the liquid, then add water to make 3 cups. Mix the liquid with Sure-Jell, with lemon juice, and if desired, with a few drops of red food coloring. iBring the mixture to a boil over high heat in a large, stainless-steel pot.

After that you may add the sugar, bring to a hard, rolling boil, and boil for exactly 1 minute. after this minute, remove from heat, and stir in reserved rose petals. Stir for a few minutes so that you prevent petals from floating. Pour the jam into sterilized jars, and seal them. Bon appetite, mon amour!
