Tropical Millet Delight


  • 6 apples (1 1/2 cup of juice)
  • 1 cup of water
  • 1/2 cup of millet
  • 1/4 cup mashed banana
  • 2 tablespoons chopped dates
  • 1 tablespoon unsweetened flaked coconut
  • 1/2 teaspoon of pure almond extract

Juice the apples. Set aside 1 1/2 cups of apple juice.

In a large saucepan, combine the water and apple juice, and bring to a boil over high heat.

Reduce the heat to medium-low, and stir in the millet. Cook uncovered until the water is absorbed, about 10 minutes.

Add the remaining ingredients, and stir.

Serve hot with unsweetened soymilk or juice.
